Loaded Veggie Sandwich

This sandwich is for all you out there who don’t find salads appealing in the slightest but want to make sure you’re getting your 5-a-day in!

So simple, quick and fresh.

Hummus forms the base…

Roasted red pepper would also work really nicely.

Variations could include:

  • Red onion
  • Diced celery
  • Avocado
  • Mashed chickpeas
  • Sun-dried tomatoes
  • Portobello mushroom

Be warned, as delicious as it tastes, it’s rather a challenge to get your chops around. However, it’s well worth every smear of hummus across your face!
